What is dry yeast?
Instant dried yeast is dehydrated yeast, ideal for making homemade bread and yeast-raised dough, as well as baguettes, brioche and Viennese pastries.
Instant dried yeast comes in the form of small vermicelli.
Ready to use, it does not need to be rehydrated.
How do I use dried yeast?
To be used, it does not need to be rehydrated and is incorporated directly into the flour with the other ingredients in the recipe, or added at the start of kneading, without prior rehydration.
Your yeast should never be in direct contact with the salt. If it does, it will lose its function and your dough will not rise. So avoid adding the salt just after the flour.
The dosage is generally 10 to 15 g per kilo of flour.
How do I store dry yeast?
Instant dried yeast keeps for a long time at room temperature. We recommend storing your yeast in a dry place away from heat.
Recommendations: Instant dried baker's yeast should not be ingested as is.
