Caraïbe, a well-balanced dark chocolate made from a blend of Valrhona Grands Crus, with a sweet spicy, slightly woody flavour.
Courbe tempérage / Tempering temperatures:
Melting: 55-58° C, crystallisation: 28-29° C, working: 31-32° C
Due to temperature differences, the pistoles may melt during transport or storage. They can still be used, but they may not arrive at their destination in their original form.
Ingredients: cocoa beans, sugar, cocoa butter, emulsifier: sunflower lecithin, natural vanilla extract.
