IsoIsomalt is pre-cooked decorating sugar in powder form, which can be used to create transparent sugar decorations in just a few minutes, to be coloured and flavoured as you wish.
Isomalt comes in the form of white, odourless powder or granules, with a sweet taste and low hygroscopicity.
Isomalt is ideal for making pulled sugar decorations, and is also a sweetener that replaces sugar. It gives body and volume to your preparations and limits moisture pick-up in confectionery.
Use:
Ready to use, isomalt requires no added liquid or stabiliser. Very easy to use, just heat it for a few moments. You can melt it as many times as you like without any risk of crystallisation.
For art sugars and sugar decorations, melt 100 to 200 g of water with 1 kg of isomalt over a low heat, bringing the mixture to 160°C.
For a cast sugar, traditionally work at 160°C.
For satin sugar, heat to 170-180°C.
To colour the isomalt :
Dilute a small pinch of water-soluble powdered food colouring in a teaspoon of water. Pour into a saucepan and allow to reduce slightly. Add the isomalt. Mix with a spatula.
Ingredients: isomalt E953.
May contain traces of soya, milk, egg, gluten, nuts, sulphites.
Excessive consumption may have laxative effects.
Suitable for vegetarians.
For use in foodstuffs.
Store in a cool, dry place.
